Production process
This wine is made using the traditional ‘bleeding’ method for red grapes, following a brief period of contact with the skins (approx. 12 hours).
Once the must has been extracted, it ferments at a controlled temperature (14–15°C) for 15–20 days in small stainless-steel tanks holding around 4,000 litres.
Once fermentation is complete, the wine will be left to age for three months in new French oak barrels in contact with its lees.
Following the wine’s brief time in the barrel, the usual stabilisation and filtration processes will take place prior to bottling.
