Production process
The grapes are harvested into crates and always at the optimum time to ensure perfect alcoholic and phenolic ripeness. These grapes undergo two selections before entering the winery: an initial selection in the vineyard, where we harvest only the perfect bunches, followed by a selection of individual berries in the winery. Maceration is preferably carried out at cold temperatures for 24 hours. Alcoholic and malolactic fermentation takes place in French oak vats. Ageing in French oak barrels. Aged in French oak barrels for 15 months and then bottled, where it will remain for at least 6 months in our cellars.
