Production process
The harvest of our Finca Santa Julita Viñedo Singular takes place in crates and always at the optimum time to ensure perfect alcoholic and phenolic ripeness. These grapes undergo two selection processes before entering the winery: an initial selection in the vineyard, where we harvest only the perfect bunches, followed by a selection of individual berries in the winery. Preferably cold maceration for 24 hours. Alcoholic and malolactic fermentation in French oak vats. Ageing in French oak barrels for 15 months, followed by bottling, after which it will remain in our cellars for a minimum of 6 months.
Flavour and texture
Finca Santa Julita Viñedo Singular is a deep, garnet-red colour. Clear and bright. Red and black fruit, cherry and blueberries. Notes of vanilla, dairy and spice (liquorice, clove and pepper). A sweet attack on the palate, with soft tannins underpinned by lively acidity.
