Production process
We select the grapes for PERICA ORO from the family’s oldest vineyards. These are small, long-established plots that we harvest by hand, using 10-kilo crates. We always harvest at the optimum time to ensure perfect alcoholic and phenolic ripeness.
These grapes undergo two rounds of selection before entering the winery: an initial selection in the vineyard itself, where we harvest only perfect bunches, followed by a selection of individual grapes in the winery using a sorting table.
Alcoholic fermentation with extended maceration and malolactic fermentation in 6,500-litre French oak vats.
Aged in new 225-litre Bordeaux-style French oak barrels for 30–32 months.
Aged in the bottle for at least 18 months before being released onto the market.
