Production process

The grapes are harvested in boxes and always at the optimum moment to guarantee perfect alcoholic and phenolic ripening. These grapes undergo two selections before entering the winery: a first selection in the field, where only the perfect bunches are harvested, and then a selection of the grapes in the winery. Alcoholic and malolactic fermentation in French oak vats with a capacity of 6,500 litres. Ageing in 225 litre Bordeaux barrels for 30-36 months, combining new and semi-new (225 litre) French and American oak barrels. Ageing in bottle for at least 24 months before release.

Flavour and texture

Intense ruby colour, clean and bright. The nose shows some very positive evolution that gives the wine a stately appearance. There is a perfect balance between ripe forest fruits, liquorice and a spicy character with nutmeg and cinnamon, very well intertwined with the balsamic aromas, cedar, laurel and notes of thyme. On the palate it has a smooth entry, silky and elegant tannin that gives way to a complex finish with a slight acidity that lengthens its sensations over time.

Ideal to accompany

Ideal wine to be tasted without accompaniment, stews, sausages, vegetable stews, and with all types of meat.

13,5-14% vol.

Varieties

Tempranillo (mostly), Garnacha and Mazuelo.
